The great thing about making soup, is that you don't need to be too precise with your measurements. Of course there are certain rules of thumb, but don't worry about getting these amounts perfect when it comes to soup. You'll notice...
I didn't measure at all for this one.
Okay maybe 2 garlic cloves. But full disclosure? I whipped this recipe up from scratch (after looking up a few model recipes, so consider that what you will).
Ingredients
- Celery
- Onion
- Garlic cloves
- Beef or chicken bone broth
- Water ~ as needed
- Cubed sweet potato
- Lentils
- Salt & Pepper
- Garlic powder
- Meatballs*
- Tuscan kale leaves, de-stemmed
- Top with basil leaves
*For the meatballs, you could prep these ahead of time and cook in the oven, or let boil in the soup. I found that baking them in the oven before added a lot of flavor. I followed this recipe by Yummy Healthy Easy
Instructions
- Saute chopped onion, celery, and garlic in pot with avocado oil until browned
- Add broth, water, potatoes, S&P, garlic powder
- Simmer for ~30 min, or however long your heart likes
- Add lentils and let simmer 30 min more
- Add in pre-baked meatballs (or try baking them in there, but give more time)
- 10 min before serving, add in kale
- Top with basil
- Blow your eaters away with how yummy it is!
